Roy Alonzo, Thompson School professor emeritus of restaurant
management, has published his fourth book since retiring,
the newly released second edition of “The Upstart
Guide to Owning and Managing a Restaurant.”
In this book, Alonzo points out that to flourish in the
restaurant business, aspiring restaurateurs must offer a
unique concept or be able to do something better than their
competitors, and be open-minded to change.
“The Upstart Guide to Owning and Managing a Restaurant” leads
readers through the entire process of starting up a restaurant,
from the initial concept through the grand opening, pointing
out pitfalls to avoid and presenting strategies, tips and
procedures on how to manage and market profitably.
Alonzo, who taught restaurant management at UNH for 27
years, is also the author of “The Upstart Guide to
Owning and Managing a Bar or Tavern.”
